Fire up the barbecue for beefalo
What do you get when you cross a cow with a buffalo? Beefalo - a hybrid animal that produces red meat lower in fat and cholesterol than beef, reports KPLU. Most consumers have never heard of beefalo, let alone tasted it, and only a few Seattle grocery stores carry it. But that could change soon, in part to a newly cash-infused marketing campaign by the Beefalo Northwest Association. Listen for radio campaigns touting a "tender, flavorful, and healthy meat" perfect for barbecuing. How does a buffalo burger compare to a beef one? "It has a richer flavor and it's milder and sweeter than beef," says Ellensburg beefalo breeder Mark Merril, "and more juicy."

It's a cross between an American Bison and a cow, not technically a buffalo and a cow.
