I was so excited for the kids to head back to school after winter break today! But it also brought me back to the chore of making healthful lunches that my kids won't shun.
I've found the secret is in variety. One of the ways I've created variety in my kids lunches is with "Laptop Lunches."

It's definitely not cheap, but it has given me another option for packing lunches. The laptop lunch is not your ordinary lunchbox. It is hard plastic, about 3 1/2 inches thick, 9 inches long, eight inches wide (just to give you a visual). It comes in snazzy colors and has three box-like open compartments and one compartment that comes with a lid. The compartments are removable and can be washed in the dishwasher! Hooray!

The laptop lunch has made my life easier in a number of ways. 1) it's visually appealing to the kids 2) it eliminates the need for ziplock bags 3) it provides a "guide" for how much food is the right amount of food 4) it encourages variety in foods with the different compartments.

You may want to check it out for yourself. I think the colors and compartments have really brought some easy pizazz to my kids lunches, with very little brain-strain for me!
